Fried Apple Tacos

It’s apple season and we have a peppy appetizer which lavishly uses freshly harvested apples. Executive Chef Avinash Kumar from Novotel Imagica Khopoli near Mumbai, shares an innovative recipe of Fried Apple Tacos.

• Refined flour 300 gm
• Vegetable Oil 50 ml
• water 100 ml
• salt 3 gm
• Baking powder 5 gm

For crumb fried apple
• Apple 100 gm
• Cinnamon a pinch
• Salt 10 gm
• Water 200 ml
• Refined Flour 10 gm
• Bread crumbs 60 gm

Pico de Gallo
• Tomato 100 gm
• Onion 20 gm
• Jalapeno 20 gm
• Tomato juice 50 ml
• Lemon juice 10 ml
• Fresh coriander 5 gm
• Tobasco Sauce 5 ml

Red Pepper Pesto
• Red peppers 100 gm
• Pine nuts 20 gm
• Garlic 10 gm
• Parmesan cheese 20 gm

• To make the tortilla dough, mix flour, salt, baking powder in a mixing bowl, add butter, water and knead the dough until smooth and elastic. Rest the dough for 10-12 minutes.
• Divide the dough in small roundels and roll into thin round tortillas. Cook until bubbly and flip it and cook on both sides. Keep it in a tortilla warmer.
• For crumb fried apple, cut the apples in wedges and blanch them in cinnamon and salt water.
• Make a batter of refined flour, salt, water and crumb the apple wedges and keep aside. Heat oil and deep fry them until golden brown.
• For Pico de Gallo, de-seed tomatoes and cut them into cubes, add chopped onion, coriander, tomato juice, tobasco, jalapeno and tomato juice. Mix well.
• For red pepper pesto, roast the bell peppers, de-seed and mince them. Add garlic, pine-nuts and parmesan cheese. Mix well.

To Assemble
• Place the tortilla in the tortilla holder; arrange the rocket leaves with the crumb fried apple. Add tomato salsa and red pepper pesto on top. Followed by shredded radish, fresh coriander and charred corn kernels.
