Banana chips are an everyday snack in the sub-continent. As chefs and hotels work towards a zero-waste and sustainable ecosystem, the emphasis on working around fruit and vegetable peels is gaining in credence. Cooking with banana peels has caught the fancy of chefs across India and jumping atop the bandwagon is Chef Vaibhav Arora from Renaissance Ahmedabad who shares an interesting recipe of fritters made from raw banana peels.
100 gms raw banana peels
25 gms flour
0.5 litres oil (for frying)
Salt, amchoor and paprika powder to taste
A handful of chopped coriander
A few teaspoon of lemon juice
A green chilli
- Keep banana peels under iced water for about 10 minutes and then dust with flour.
- Heat oil in a pan.
- Fry the peels till crispy and golden brown.
- Season with salt.
- Serve with chutney made by grinding together coriander, green chillies, salt, lemon juice and amchoor powder.
Relish as a tea-time snack!
